MikeC/TX has given you very good advice for the specific questions that you have asked.

The following is NOT personal! It applies to all people who are starting out wanting to become Notary Signing Agents.

Now please heed this advice: You are not ready to conduct a loan closing. Being a Notary and printing the docs is the very smallest part of the job.

Do not attempt to conduct a loan signing until you have specific training. If you do, you'll screw things up. You may cause the borrowers to lose their rate lock and have other severe problems. That could easily land you on the wrong side of a lawsuit THAT YOU WOULD LOSE!
