Why are notaries hired, period...for anything?

Aren’t we, by definition, disinterested third parties? You work or have worked as a notary signing AGENT....and you ask this question? If borrowers read instructions and followed directions, including getting docs notarized at the UPS Store, getting their IDs photocopied as required, and scanning/emailing back the signed package, would NSAs be necessary?
