I regularly tell gnw callers that (just giving them all their options). I actually had a guy last month send me an e-mail to say he had his bank notarize - and to thank me! Well, glad I could help 
It IS disconcerting that $5 a notarization (not signature) is all we get.
And I can't recall other than once maybe being asked to do a random notarization during a settlement "signing."
However, I will take it on good authority and ask for payment when circumstances justify.
Just have to get prepared if asked on the spot. "That will be 2 bucks a signature, please!"
