Usually that stacking order instruction is for the closing agent, not for us the signing agent. It's not our job to rearrange the docs. In fact, most TCs prefer we keep docs in the order sent.

Title affidavits = escrow docs.
Lengthy customer information sheet - Statement of Information, yes lengthy, yes required and there's usually a blurb at the top of the doc explaining its purpose. By the way, the SOI used to be in most packages. Nowadays, it's one a very few files. When included, I always ask them to complete at the end of the signing while I'm doing my final review of docs.
