Don't know if this will help (and I've posted about this before), but I once met a couple at a Starbucks to get some trust documents signed. (They called me directly.) A couple of their documents needed witnesses and they said they didn't know anyone to ask, so they bought a $5 Starbucks gift certificate to give as a thank-you to someone who would agree to help. (We picked a busy Starbucks and a time when we were sure there would be lots of people there.) I've successfully used that approach more than once since then.

We ended up asking a guy who was there by himself, who I believe would have been happy to help regardless, but I thought that was a great idea in a pinch. That was pre-Covid, so perhaps more $ would be appropriate these days, especially depending on how many documents to be witnessed. However, when you have a client (i.e. the attorney who hired you) in the middle, that approach might be dicey without advance confirmation for a witness.

A $25 payment to someone who was already nearby could be a nice enticement, but I can't think of anyone I know who would be willing to tag along (or come meet us somewhere) for that kind of money.
