Do your notarizations correctly with the correct date (date they appeared and acknowledged or signed/swore in front of you) and you're fine. The rest is not your problem. If you're talking about changing dates within the documents (and not on the signature lines notarial certs) then no, those don't get touched. If it's a date on the signature line, then yes I can see that one needing changing. Usually the dates of the instruments are on page one.

As for the NORTC, As of the date of YOUR signer's signing, THAT is the effective rescission period - until the second signer signs, which effectively extends the rescission period to the "latter of the three". So the current date on your signer's NORTC is fine and no change is needed.

I, too, would like to see the citations for this "law" you stated.

Honestly, I'd just get it done as instructed and keep good notes.
