It's less of a conflict of interest if we provide the witnesses rather than the signers bringing in their own which may or may not be related to them.

I prefer the coffee shop route. Believe it or not, the coffee shop employees are used to witnessing, I love using them, and I always pay my witnesses. They are always appreciative.
