You should be able to call the signing service and someone there should be able to walk you through the process for that signing.
I do not know why there is such a concern in have a person shadow a signing. They do not have to sit at the table.
The shadow would have the same responsibilities to not divulged any information.
Similar to having a intern at the Doctors office.
I would certainly get the customers permission to have a shadow present.
I have found that developing good relationship can be a benefit to both parties in the long run.
