The few times I needed a witness, it was for a FL property so I either had the signer provide one or brought along a friend.
There was one signing I remember where a witness was needed; the signer was supposed to provide a witness but came alone, and my friend wasn't available on short notice. We were doing the signing at a local diner, so I took a shot and just asked the waitress if she would do it. I explained the situation and told her that all she needed to do was watch the borrower sign the document and then sign her own name as a witness to that. She was hesitant at first, so I told her that I don't need your ID, I don't need to know anything about you, all I'm asking you to do is watch this nice lady here sign that piece of paper, and then you sign to indicate that you saw her sign it.
She signed as a witness. I left a big tip. Sometimes you have to get creative.
