They don't warn you about that, probably because a lot of people just use a pot for the water bath and put it on the stove. But then you get people like me who use a food-grade plastic tub and keep it on the countertop. You absolutely need a trivet or something in that situation, especially with granite and the higher heats. I have recipes that call for 172 degrees over an hour or more - that could crack the granite. |
