Lee has it right. Unless you can get back to do the resign when it needs to be done, your only choice is to tell the company that hired you they will need to find another notary to take care of your mistakes.
From now on, make it a point of reviewing the signed docs twice before sealing them in the shipping envelope. The first time through, look for signatures and dates and review your notary certificates to make sure you completed and stamped all of them. The second time through look for those blasted initial lines that can be anywhere on the bottom of the page. Also, I have found that I can't have any conversations going on while I'm reviewing the docs because I'm too distracted and I'll miss things.
