Obviously, Linda knows what's actually required. That being said, EVERY Florida Mortgage, DOT, etc., that I have ever received here in New Mexico is busily demanding two witnesses and either title or the SS puts giant notices in the package regarding the need for two witnesses and dire consequences if you don't get the two witness signatures. Why require witnesses when you actually HAVE a notary notarizing? Don't trust 'em? Just seems unrealistic.
