No one is going to allow you to sit in on a closing - that would be highly improper. I am in TX and my best advice is to join the Texas Notary Professionals group on Facebook. There is also a newbies TX group on FB. Brenda Stone runs both groups and you will gain a lot of knowledge by participating in those groups. The state of TX also has a free basic notary training that every TX notary should take. I tried to find the link for it but it seems to have been removed from the state website, so I will have to check in to that.
