I'm looking for a new Microsoft 365 subscription myself. The one I have is provided by my volunteer organization, and they're scaling back the number of people that get the full subscription.

I found that it will support Ipad Pro (although I don't have one). But I don't know if will work while out of cell phone coverage, on a plane etc.
I also looked at Acrobat Pro, which you MIGHT want if you want to do electronic signatures. I looked here:

About devices it can be used on, it says:
"Desktop apps for Mac and Windows
"Available on web and mobile, plus browser extensions"
The way this is phrased, it makes me suspect the full range of capabilities might not be available on the mobile. |
