in advance...download the docs, save to desktop as a pdf file and use Adobe to do it?

Personally, I would not do that. It's only going to take one title company to realize if one can alter the certs on the computer one can alter any portion of the document. IMO best bet is just attach loose certs that you pre-fill with your own document program.
