You state "basic notary work." Are you planning to focus on what is commonly known as General Notary Work (GNW)? In other words, notary work other than real estate transactions?

It's extremely difficult to find someone to shadow as we are dealing with people's Non-Public Personal Information (NPPI) and basically we hesitate on training our competition.

Does Oregon Secretary of State publish a notary handbook? If so, study it and know your notary laws and inside/out. If you're planning on handling real estate transactions, learn your state notary laws by heart then get comfortable with real estate documents then you feel comfortable when accommodating those transactions.

May I ask what prompted you to become a notary?
