Maybe she could ask her attorney if you could sign and mail a sworn affidavit stating you did the notarization, along with a copy of the Journal entry (assuming NJ keeps Journals)? Possible the courts would accept a swore affidavit from a notary, it couldn't hurt to ask.

Did the 1 witness sign the Will while you were there? Do they want to to attest to that fact?
