According to a quick online search, NJ does require two witnesses to a will signing.

If I'm reading your post correctly, you were the second witness - and you can't notarize your own signature, which may be why the will was rejected. It sounds to me that what they really want is some proof that you witnessed the will signing because you actually only notarized the signature of 1 witness and they need 2. If that's the case, you may be able to submit a notarized statement that you also witnessed the signing. I would check with the court to see what exactly it is they're looking for.
