I've never been asked to provide the witnesses, but

like the suggestions posted about meeting at a bank or public place. I have had situation where we signed at a Starbucks or similar place & asked customers to act as witness. I'm the one who asks them, making sure it's a professional request. I haven't paid those witnesses, but it wouldn't be out of the question.
I agree that the witnesses should be compensated by the lender/ss since they're the ones requesting it.
