Fidelity Title in FL always makes a big stink about this in my opinion. I do not bring any witnesses and the one time that I finally agreed to do it they were going to pay me more. I ended up canceling it as I did not like how the signing company and the escrow officer treated me. Very rude and disrespectful. There are certain states that "do" require a witness every time. I do not know which ones those are and FL is one of them.
