If you've already read through the materials at your state website and feel you need more, please describe how you want to be active in the field. Do you want to be a mobile notary who handles (mostly) real-estate related signings by traveling to their home or workplace? We often refer to people in this branch of the field as notary signing agents, or NSAs. This site, Notary Rotary, sells a guide for this:

If you want to do notarizations for your work place, or your friends and neighbors, you just need to learn about the notary laws and best practices. I personally have not read anything for this that isn't either poor or out of print.
