There is tons of information here and elsewhere, but be careful what and who you listen to... Just because someone speaks with authority doesn't mean they know what they're talking about.  And sadly, there are lots of charlatans in the notary training business (and online directory business) who are happy to separate you from your money with lots of promises - but some (if not most) of them are empty promises.
You're coming to this with a bit of an advantage over many with your experience with processing and the right kind of attitude.  How long it takes for you to start earning money (let alone making a living at this) will depend on a combination of things, such as how much potential work is within reasonable driving distance to you, how much competition you have, and how hard you're willing to work to make yourself known.
One more thing which I don't recall anyone else having mentioned... When you do a cost/fee analysis, make sure you factor in ALL your business related expenses! There's a great deal of info here on that topic, too.
