Yes, like you, I ask lots of questions in advance of an appointment (pretty much the same ones you did), and it's often saved me from wasting my time and theirs. My concerns will be different if it's an older person signing a POA vs. a a business exec signing a contract. My guess is that you were just the convenient target for him to direct his anger - especially if they really were divorce papers...
The only difference with me is that I'm not quite as organized as you, so I probably wouldn't have a receipt prepared in advance. I also don't itemize the types of documents on my receipts, as I don't think that info is necessary. I simply put the number of signatures notarized x the per signature fee (what we're allowed here) and my 'mobile service' fee itemized separately. If they want to write notes on there about the purpose of the notarization(s) or whatever, I leave that up to them.
