Someone (or everyone?) in that County Recorder office must be extremely literal, as our Civil Code (1189) says "A certificate of acknowledgment taken within this state shall be in the following form..." So I guess it's understandable that if you delete any words (even pronouns) from what is shown there, it's no longer "in the following form".
I don't think there's a problem with crossing out the wrong ones as long as you don't leave them off altogether, i.e. 'personalizing' it. If you do, it is likely to get rejected from that office. I'm not aware of any other county in this state where that happens, but would like to know if there ARE any others.
