Was he a Signing Service and listed as such? Notaries should never subcontract work out. It's not legal for loan signings when confidential information is involved.
Do you have the information of the title company for the closing you haven't been paid on? If you bring this to their attention, they will drop the hammer on this notary because he was not permitted to sub out any of his closings to another notary. They will verify the notary's signature to that of the hired notary and will be major consequences to him. The title company will also be in very hot water because post-closing should have caught the discrepancy between the hired notary Edward Miller and you. We as Signing Agents are vetted through hiring parties and agreed to by the lender and title, they pay us. They have no idea of who you are, and for privacy and personal and confidential reasons, you cannot do these closings without their consent.
That is what I would do at this point and is the legal and ethical obligation you have. You won't collect the money, you can try, but the biggest satisfaction is you are closing this notary down and possibly getting fined if implications occur.
