If you strike out something like: the "s" in person(s) or he/she/they - you do NOT need to initial anything. Just make a neat strikeout.
HOWEVER, if you strike out something that is incorrect, and you REPLACE IT WITH SOMETHING ELSE, like: the date that was prefilled incorrectly, you DO initial that when you enter the correct date, because you are effecting a replacement of that date, or a wrong venue.
Just remember, if you simply strike out something, you do not initial (it would look like a mess anyway) - but if you strike out an item and REPLACE it with something else, you DO initial. It's really simple. Common sense and notary education goes a long way toward doing things right.
If there are TWO names in the acknowledgement (like I'm doing a Seller Pack tomorrow) but you are only signing ONE of those persons, you strike out the name of the party that is not present. Now, if you wish, you can initial that, or simply ADD "and no others" and initial that addition.
(Hint: Do NOT touch the signature line, JUST your acknowledgement. Ignorant notaries start scratching out the missing party's name on all the docs - they can't comprehend that this is NOT their function.)
