Most of the docs you're talking about are disclosures and the type and quantity will vary greatly from package to package. Nearly every title co/escrow office will have a stamp like the one you describe (and they can vary quite a bit, too), for the buyer to sign off on those misc. docs.
The PCOR (or Preliminary Change of Ownership Report) is a different story. You'll see one of these for every type of Deed that impacts how title is vested, so this will go to recording with the Grant Deed transferring title to the new owner. There are still a variety of versions out there, but if you see one of the newer ones, there's a line at the top of the first page that should be filled in asking if they intend to occupy the property and when. Also a good idea to fill in a phone number above that.
The most important thing, though, is the signature on the 2nd page that Yoli referred to. I'm not really sure why they would use a "Read and approved" stamp on that form, unless it was a seller... (Sometime they get stamp happy...) If it's not too late, you could always make an extra copy and return two versions, just in case.
