Three basic rules of notarization:

1) The ID complies with your state's requirements;
2) The venue is where your feet are when you notarize; and
3) The notarization date is the date you put pen to paper.

Even if you screwed it up, the only option for you is to do it all over again, possibly at your cost. You can't just say "oops" and modify the documents. If the TC wants you do that, just push back - what they would be asking is illegal; tell them that.
