Correct me if I'm wrong, but you would not under any circumstances notarize a document by that individual even if previously signed since he's not awake to acknowledge that he previously signed. You could notarize an affidavit of the witnesses that they personnally witnessed the person in coma sign the Power of attorney in front of them before he/she was placed in a coma.
