And if it's something that doesn't need to be encrypted (can't think of what that might be with loan docs, though), it's very easy.

If encryption isn't an issue, they can simply view the PDF, then use the menu bar (3 dots) to 'open' the document. Then it can be signed with a finger or stylus right on the phone's screen. From there, it can be directly forwarded by email (or text, I believe) to someone else and/or saved.
