Notary Packets

The law firm I work for is requesting that I perform a Remote Online Notarization and has submitted a packet of 50 signature pages (footer on bottom indicating what document it goes to) and 50 pages of Notary Acknowledgements. Would any of you do this without the actual documents? Must be something done a regular basis in NYC but Virginia does not fly that way.
