"The certificate of acknowledgment must be filled completely out at the time the notary public’s
signature and seal are affixed. (Civil Code section 1189(a)(1))" [Page 10 of 2022 Handbook. (Because) there’s no provision that allows the notary to return and fix the error. I refer to this rule as no “do-overs”. Unless (and I guess this hasn’t been thought of yet) the notary actually takes full possession of the document. Then under those odd circumstances the notary could complete the acknowledgment on their own time.
