I would have proceeded. New Jersey law appears to be similar to Florida law regarding identification. I would make sure to complete my certificates showing the following:

The foregoing instrument was acknowledged before me on April 27, 2017 by "First, Middle Initial, Last Name" who produced FL DL in the name "First, Last Name" as identification, and represented to me she is known as "First, Middle Initial, Last Name."

This makes it clear what was actually shown on the ID vs. the name that was signed on the document. The signer is representing to be known by the name variation, I am not certifying it.
