I had an assignment where an elderly woman in a nursing home was signing-over her house (Deed) to her son, they were both present at the appointment.

I sensed something wasn't quite right, as her son seemed particularly anxious. I asked to speak with his Mom one-on-one. He agreed and left the room. I then asked her cognitive awareness questions like, the year, the current President, etc. She passed. I then checked for willingness and awareness of the documents. She stated that he (the son) "has a sister and he knows it." And, "she deserves some too." I asked her point blank if she wanted to sign the documents and she said, "No."

I then called the son into the room and let him know that I could not notarize the documents, as the signing party (his Mom) was unwilling. I eased into it, but, nonetheless, he, unsurprisingly, blew a gasket. Then the Mom started to say that she wanted to do whatever the son wants. She could not stand-up to him.

I kept my cool, stayed out of the drama, and immediately contacted the hiring party to apprise them of the situation. They completely understood and there was no problem (and I later got paid in full, with a thank you). However, the son chased me into the parking lot screaming at me and telling me that he would get another notary. Which I reported back, with all of the other details. The son lives in my neighborhood and I had done previous signings for him (refis) and his family, which were fine. Anyway, I documented everything in my journal and reported every detail to the both the hiring party and our local senior advocacy group.

I feel comfortable with what I did, had grounds to refuse the notarization, had support from the hiring party, kept copious notes, and contacted support for the woman. But, I must say I don't want to run into the son at the grocery store!
