Blood glucose is determined PRIMARILY by how much fat we eat, and SECONDARILY by the amount of carbohydrates we eat. Keto teaches the opposite, which is against body chemistry.
While flat-lining glucose on a keto diet may occur, the minute you choose to eat carbohydrate rich foods such as a banana, a potato, a bowl of quinoa, your blood glucose is likely to increase significantly due to a hidden state of fatty acid-induced insulin resistance.
A low-fat, plant-based, whole food diet that is LOW in fat, makes tolerance to carbohydrate rich foods increase substantially. The result is maximum insulin sensitivity and the opportunity to completely reverse insulin resistance (cause of diabetes) altogether. With a plant-based, whole foods-based diet it is quite easy to maintain a flatline glucose level as long as your total fat intake remains low, and your carbohydrate intake comes from whole foods like fruit, vegetables, legumes and whole grains.
While there are tons of studies from medical research scientists it seems like those who have limited research knowledge and/or stand to profiteer from making new disciples will heartly push keto.
