Thank you so much for sharing your journey! It really makes me want to start a kale garden! :-) I’m not quite there yet - just due to time, labor, expense, and the ease of being able to get great local year-round veggies at a nearby store. But, maybe I can start small and/or perhaps my husband would be interested. It’s really interesting (and inspirational) how people can maintain a healthy lifestyle. So cool about your 99 y/o uncle in SF, and having his kale garden too! :-) There really could be something to freshly-harvested-at-home greens.

I tried making soymilk, and tofu, and it was a big bomb! :-) I still have bulk jars of dried soybeans. I might try nut milk, now that you’ve mentioned it. And, we just got a new nut grinder.
My husband makes a super tasty batch of black beans about twice a month. He’s been experimenting with his recipe for about 4 years. I never thought black beans could taste so good! It’s great as a stand alone or added to dishes. It’s a nice thing to have on hand to add with veggies or made into soup, or put into stuffed peppers….
For the digestive system, I drink psyllium and water first thing in the morning, then (like you) I have oat bran with cinnamon/clove and fruit/ground peanuts. I also take a digestive enzyme once a day (with dinner), because as we age our bodies stop producing digestive enzymes (and we can’t fully absorb nutrients without a well-functioning digestive system). The combination of those three things has been very effective! And, I used to have a funky stomach (now gone).
I tend to complicate my cooking! Right now, my cheery trees are blooming, the weather is nice, and I’m ready for some easy light cooking/eating, and ditching some of the meat (minus crab season!!). Getting inspiration and new ideas fits right in! :-)
