I've done exactly one of these, a couple of decades ago when I was a corporate notary. All parties were co-workers and we all knew each other. So I think I get your initial hesitancy.
In your original post, you mentioned something about "the same day". I didn't see any reference to that being relevant, but it might relate to the only thing I might wonder about and would likely be asking some questions about, just to give myself a level of comfort. I'd want to know why the use of Subscribing Witness was necessary, in other words, why isn't the Principal available, and why couldn't it wait until he or she is available? Doesn't it generally take months to get a Passport issued?
I can think of lots of potential situations where this might be practical and even necessary, but I can also imagine this type of process (with the aid of a 'co-conspirator' Credible Witness) being used, for example, to assist one parent with illegally taking a child out of the country permanently. So how well I knew (and what I thought of) the CW would likely weigh into my decision, too.
With acceptable explanations for the above [not legally required, but for my own peace of mind], I can't think of any other reasons to not do this.
