I appreciate all the feedback and advice, and I am set on starting this by the end of the month. I am still eating the low-cal diet food I bought watching calories, and when that is gone I will make the transition. I can't stomach throwing away a lot of food, especially for what I paid for it! lol Keto is not budget friendly either, but once you get your oils and flour and such, it will last a long time.
This is the first diet I am actually excited to start. It helps with brain function and memory as well, which I can use. The last year or so I find myself not as sharp as before. My sister died of Alzheimer's, so it's always in the back of my mind when I try and think of something, and my brain spins like an old Rolodex trying to remember what used to be right there.
